• Mushrooms

    Chinese mushrooms, also called shiitake, are used extensively in Asia. In Japan it is mainly used in miso soup, and various steam dishes. In China, it is usually in stir-fry dishes. For preparation, soak the mushroom in water until it turns soft. Soak it at least a day in advance for the best results. To use, squeeze the water and cut the stalks off. The hat can be cut into strips or pieces. Then it is ready to used in various dishes.
